Venison Tri-Tip Roast

Smoke/Grilled Venison Roast


– 5-7 lb venison roast

– Cherry wood chips  

Soak and marinade:

– 1 cup Jack Daniels Whiskey

– 1 whole sliced onion  

– 3 cloves garlic smashed (for those non garlic eaters…) 1 tbsp coarse sea salt 1 1/2 tbsp freshly cracked pepper 2 sprigs of rosemary 1 sprig


Combine all marinade ingredients together, either bag the roast or place in pan to cover roast.  Marinate 4 hours to overnight. Soak chips for 4 hours.. Combine all dry rub ingredients and crumble with fingers so there are no clumps. Remove roast from marinade, saving the marinade for later.  Pat dry and rub the roast with the combined rub ingredients. Prepare grill for indirect grilling/smoking or use a smoker… Add wood chips to the coals if using charcoal, to a smoker box if using propane…  Allow the smoke to get thick, now add the roast. Smoke grill it at 250-275 until desired doneness… For a flatter roast approximately 1 1/2 hours for rare to med rare, for a thick roast greater than 3-4″ about 2 hours for rare to med rare. Slice against the grain and serve with roasted squash and potatoes, garlic bread, and your favorite drink! Enjoy..
