1 lb. boneless venison steaks, ½ in thick

½ cup flour

Salt and pepper

4 tbl butter, separated 2 tbl and 2 tbl

2 tbl cooking oil

1 ½ cup beef broth, separated ½ and 1 cup

½ cup cooking sherry

1 lb fresh mushrooms, slice thick


Dredge steaks in flour and salt and pepper. Brown in butter and oil in fry pan medium high heat. Remove from pan.

Add ½ cup broth, sherry and mushrooms. Cook until mushrooms are softened.

Return steaks to pan. Simmer on low heat for 30 minutes.

Remove steaks, add 1 cup broth and 2 tbl butter. Stir and increase temperature to make a thin syrupy gravy.

Serve over wide noodles or brown rice pilaf.
