Our own recipe for breakfast sausage. We make it very lean, so we use a pork loin that we grind ourselves for the pork. It’s a favorite at deer camp , sausage gravy over biscuits… Submitted by Mary S.
Ingredients
– 6 lbs. ground venison
– 3 lbs. lean ground pork
– 3 Tbsp. salt
– ¼ tsp. ground red pepper
– ¼ tsp. red pepper flakes
– 1½ Tbsp. black pepper
– 1½ Tbsp. ground sage
– 1 tsp. anise seed
– 1 tsp. nutmeg
– 2 tsp. sugar
