Brandy and brown sugar are soaked up by the pancake mix. This provided a thin covering for the duck meat and gives it a sweet tangy flavor. Tastes great served with fried eggs and toast. A change of taste from the standard sausage or bacon… Submitted by Matthew M.
Ingredients
– One mid-sized duck breast cut into thin strips.
– 2 shots of Brandy.

– 1/4 Cup pancake mix.
Directions
1.) Cut duck breast into finger sized strips.
2.) Turn stove on medium high heat. Place duck meat in pan and add brandy.
3.) Heat for 2 minutes then add other ingredients. Stir occasionally until meat is cooked through.
4.) Should liquid evaporate and contents start to burn, a splash of oil can be added. Be careful not to over-cook.
