Catch of the Day Grilled Fish Tacos


A healthy and delicious recipe for mouth-watering fish tacos!

Ingredients

5 Tbsp fresh lime juice, divided (2 limes should be about right)

1 bunch scallions, thinly sliced

1/2 cup chopped fresh cilantro, divided

2 Tbsp Tequila

2 Tbsp extra-virgin olive oil

2 Tbsp of your favorite seasoning

1 lb. Fresh white fish of your choice (Cod, Haddock, Halibut or Grouper)

1 cup mayonnaise

1 Tbsp 1/2 & 1/2 or cream

Six flour tortillas (7″”- 8″” work best)

2 avocados, peeled, pitted, thinly sliced

3 cups finely sliced Napa cabbage

Salsa of your choice

Directions

Rub fish on all sides with your favorite seasoning and place in glass baking dish.

In small bowl, combine 3 Tbsp lime juice, scallions, 1/4 cup cilantro, Tequila and oil.

Spoon this mixture over fish; cover and chill for 15 minutes.

Whisk mayonnaise, 1/2 & 1/2, 1/4 cup cilantro and remaining 2 Tbsp lime juice together in small bowl.

Brush grill grate with oil and preheat grill to medium-high heat.

Grill fish until just opaque in center, 3-5 minutes per side.

Don’t worry if the fish slightly breaks apart while cooking.

Break fish up into bite size pieces.

Microwave or grill tortillas until soft (not dry) and spread with a thin layer of the mayonnaise mixture.

Add cabbage, fish, avocado slices and salsa to taste. Finish with a spoonful of mayonnaise mixture.
