Cajun Venison Meatloaf

Not yo mama’s meatloaf!


1 lb. ground venison

1 tsp paprika

1 tsp seasoned salt

1 tsp onion powder

1 tsp garlic powder

1 tsp black pepper

1 tsp cumin

1 tsp dry parsley flakes

4 Tbsp butter

1 cup red bell peppers

1 cup scallions

1 cup onions

1/2 cup ketchup

1/2 cup evaporated milk

2 eggs

1 Tbsp worcestershire sauce

1 cup cooked potatoes

1 cup season bread crumbs

1 cup mozzarella cheese





1. In a large mixing bowl, add 1 lb. ground venison and mix in all of the spices.

2. Add butter to frying pan and saute the peppers, onions, and scallions for two minutes.  Then add in the ketchup and evaporated milk. Simmer for 5 minutes or until mixture becomes sticky.  remove from heat and let cool.

3. Add in the frying pan mixture to the bowl with the ground venison.

4.  Add in two beaten eggs, worcestershire sauce, cooked potatoes, and seasoned breadcrumbs.  Mix together, form into a loaf and place on 9×13 ungreased pan.

5. Bake at 325 degrees F for 25 minutes. Then raise oven temp to 400 for another 20-25 minutes or until golden brown. Top with shredded cheese if you please.
